Whew. After a week of cooking for my brother, we're going to be having simple meals that make lots of leftovers!
Monday: Leftovers
Tuesday: Black bean chili (I'm not sure I'll use the microwave for this)
Wednesday: Leftovers
Thursday: Twice baked potatoes
Friday: Baked Macaroni and Cheese
Saturday: Fried Macaroni and Cheese (I'll just use the leftovers from Friday for this)
Sunday: Minestrone soup in the crockpot

Just curious as to what vegetables you serve on the side of the dishes like the baked mac and cheese, fried mac and cheese, and baked potatoes? The recipes seems a little high in fat so I'm wondering if or how you balance it out. Maybe you don't have to deal with the same weight issues as we do in our house! I know artificially "low-fat" or "no-fat" meals aren't ideal but we do try to be careful.

I have a ton of frozen veggies that I bought on sale, so I always get a package out for dinner, unless the meal itself has a lot of veggies (such as the minestrone soup). I don't put that on the menu just because I'm not sure what we'll have until I look in the freezer that day.
The recipes aren't actually that high in fat--I'll use fat-free sour cream for the potatoes, and the Baked Mac and Cheese doesn't have a ton of butter, when divided among the servings. And I use only whole wheat pasta.
As for the fried macaroni--you've got me there. That is completely unhealthy, as most Paula Deen recipes are. We were at the Cheesecake Factory a few months ago and they had fried mac-n-cheese, and I want to see if I can re-create what I had. I'll let you know how it turns out!

I am always happy to see another vegetarian MPM poster, especially for crock pot inspiration. I have just started trying out having a crock pot as part of the weekly rotation. Have you tried the minestrone soup recipe you linked to here? What did you think of it?
Well, it's a fancy way of saying we're having leftovers made into something sort of new!
I always alter my recipes in some way. I don't usually add spinach, and for the beans, I put in a mixture of whatever I have on hand. I leave out the zucchini if I forgot to pick it up at the grocery store (which I did this week!). And I like to put oregano and just a little bit of chili powder--not too much. Hope that helps!
If there are two things that are loved in my house, it is mac and cheese, and fried food! Thanks for posting the fried mac and cheese recipe that combines the two!
